The company


“It all began from the idea of making common heritage and widespread the traditions of Salento pasta makers which, at the beginning of 80s, risked being forsaken and thus lost because of the frenetic race to modernity and the changes ongoing at that time.”

Starting from this idea, in 1986 Francesco Abatianni began by setting up a company that after 30 years can be considered as a leader of fresh pasta in Salento.

As craftsman of the second millennium, Francesco Abatianni only takes care of a production that he loves as his land, attached to the pasta masters’ old traditions, continuing considering the encounter between semolina and water a real alchemy and searching for the perfect balance between the taste of tradition and the taste of modernity.

In the company-owned factory of 2.800 square metres rising up on an area of 7000 square metres located in Corigliano d’Otranto, in the heart of Salento, the company produces typical regional fresh and dried pasta (short shapes and long shapes), egg pasta and filled pasta.
